Curb Your “Appletite” with this Tasty Recipe for National School Lunch Week

This week is National School Lunch Week!

To celebrate National School Lunch Week, we are sharing recipes from our first-ever Meals Plus Customer Cookbook, which Meals Plus Customers will receive this winter. The cookbook will feature management and software tips and 50+ school meal recipes submitted by Meals Plus Customers. Every Meals Plus Customer will receive one copy, and additional copies will be available for sale. Our last featured recipe for NSLW is a Baked Cornbread Apple Cranberry Stuffing, submitted by Orange-Ulster BOCES (NY).

Baked Cornbread Apple Cranberry Stuffing

Ingredients:
24 medium sized New York State apples
3 lb. bag of cornbread stuffing mix
1 lb. butter
1 ½ c. dried cranberries
water

Directions:
School_and_nutrition_menu1. Boil a medium size pot of water.
2. Peel, core and slice apples (cook in steam box).
3. Melt butter.
4. Measure out 1 ½ c. of dried cranberries.
5. Mix dry seasoning packet from stuffing mix with 4 c. of boiling water.
6. Empty stuffing mix bag into 4 inch deep baking dish.
7. Add and mix all ingredients (not the boiled water) to the dry stuffing mix.
8. Add some boiling water to the mix to make sure that the mixture is moist (no dried pieces.)
9. Now bake in oven for 15 minutes or so until golden brown at 350˚F.
