This week is National School Breakfast Week!

As we continue to celebrate NSBW, we are featuring recipes from our Meals Plus Child Nutrition Cookbook. The free cookbook (which you can download here) is filled with management and software tips, and 50+ school meal recipes. These Apple Nachos are one of the many breakfast recipes in the cookbook; add them to your cafeteria menu today!

Apple Nachos

Ingredients:
12 lb. + 8 oz. Peterson Farms fresh sliced apples pouch, 2 oz.
1 gal. + 2 qt. + 1 c. 100% natural granola, oats, wheat
and honey cereal
100 packages peanut butter, 1.12 oz. squeeze pack

Directions:
1. Pull 2 oz. soufflé cups with lids. Pull granola from dry storage.
2. Using a 2 oz. spoodle, place ¼ c. granola into soufflé cups. Place lids on firmly.
3. Pull breakfast bundle bags or boxes and place at workstation.
4. Pull fresh apple packages and peanut butter squeezes from cooler. CCP: Prepare foods at room temperature in two hours or less. CCP: Pre-chill ingredients for foods served cold (sandwiches and salads) below 41°F before combining.
5. Assemble each bag/box by: place 1 pouch of peanut butter
and ¼ c. of granola.
6. Place 1 – 2 oz. fresh apple pouch on top.
7. Cover or close breakfast bundles and date stamp.
8.Place in coolers for service CCP: Hold below 41°F.
