Spice Up National School Lunch Week – General Tso’s Style!

This week is National School Lunch Week!

To celebrate NSLW 2016, we are sharing recipes from our upcoming Meals Plus Customer Cookbook. This cookbook features over 50 delicious school meal recipes and is a compilation of recipes from Meals Plus Customers and school meal recipes using USDA Foods. And best of all – every Meals Plus Customer receives one free copy! Our first featured recipe is General Tso’s Chicken and Rice and was submitted by Perkins Local School District (OH).

Ingredients:
7 lb. – rice, brown par boiled
26 lb. + 14 oz. – popcorn chicken bites
1 qt. – General Tso’s sauce
9 lb. + 3 oz. – chicken broth
1 qt. – General Tso’s sauce

Directions:

  1. Prepare rice.
  2. Place chicken on a sheet pan and heat until 165° F. CCP: Heat to 165°F.
  3. Pour 1 quart of sauce over chicken. Toss to coat and hold at 135° F. Chicken should be sauced as needed and should not sit in the sauce. It will become soggy. CCP: Hold at 135° F.
  4. Combine remaining General Tso’s sauce and 3 (49 oz.) cans of chicken broth. Wisk until smooth.
  5. Add 1.5 quarts of the broth and sauce mixture to one pan (100 servings) of rice just before serving. This keeps the rice moist and adds flavor. CCP: Hold at 135° F.
